Beet Hummus

Total Time: 10 minutes or less

Ingredients - Serves enough for a party!

  • 1 16oz can of garbanzo beans
  • 1 small can (~ 8oz) sliced or diced beets
  • 2 tbsp tahini
  • 1/4 cup olive oil
  • 2 1/2 tbsp minced garlic
  • Kosher salt
  • 1/4 cup of crumbled queso fresco (optional)

1. In a blender, mixer, (or using an immersion blender), combine the garbanzo beans, beets, tahini, olive oil, garlic, and 5 pinches of Kosher salt. 

2. Blend extremely well until smooth. If your blender or mixer cannot fit all of the ingredients are once, blend for a bit then add the rest. Scrape from sides and blend again. Repeat as many times until hummus is nice and smooth. 

3. Taste test and add more salt if needed.

Plating: Scrape into bowl and top with queso fresco (optional). Serve with pita, crackers, chips, etc.
