cast Iron roasted bacon & brussels
Yum! The perfect side dish! It pleases both veggie lovers and meat lover alike. The brussels sprouts are crispy and flavorful, and this dish couldn’t be easier to make. If you’re not sure about brussels sprouts, this is a great recipe to give them a try.

Ingredients - serves 4 as a side dish
12oz. Brussels Sprouts, stem base cut off, and sprouts cut in half
4 strips of thick-sliced bacon
2 cloves of garlic, minced
1/2 tsp. smoked paprika
1/4 tsp. crushed red pepper
Kosher salt
Black pepper
Pre-heat oven to 425.
Have all of the brussels sprouts and garlic prepped and ready to go. Some recipes tell you to remove outer leaves. I like to keep them! They turn into little tasty, crispy bits that I love to snack on right when this dish is complete.
In a medium to large cast iron skillet, cook the bacon fully, about 8 minutes or so. Remove the bacon and turn the temperature to medium low. Don’t clean it out and remove bacon grease! We need it!
Let the cast iron cool slightly, only about 1-2 minutes. Add the brussels sprouts and bacon and sauté for about 2 minutes over medium low heat. Sprinkle the smoked paprika, crushed red pepper, a few large pinches of Kosher salt, and some black pepper on the brussels and stir in.
Remove cast iron skillet from the stove top and place directly into the pre-heated oven. Let roast for 10 minutes. Sometime during the roasting period, after the bacon has cooled, crumble it up into small bits and set aside.
Take cast iron our carefully, and stir brussels around. Place back for another 10 minutes.
Do this one more time - this makes them cook evenly for a total of 30 minutes.
Remove and stir in the bacon crumbles. Serve warm and enjoy!
Plating: Serve with your favorite main dish! Goes well with anything grilled, especially steaks.
