Easy Peasy Lemon Ricotta Angel Hair Pasta


So simple it’s silly! Done and DONE in no more than 20 minutes, too. This dish is great as a main course (maybe with some shrimp or chicken added) or a side dish for a family meal. It takes no time at all, and anyone can make it with ease. Great for kids to make, and the bonus is that everyone will love it.

Try adding in-season fresh herbs to mix it up!

Prep Time: 5 minutes

Cook Time: 15 minutes

Level: Easy

Ingredients - serves 2 for meal, 4 for side

  • 8 oz. angel hair pasta

  • 1 1/3 cup ricotta cheese

  • 1 cup grated parmesan reggiano

  • 1/2 cup of reserved pasta water

  • 1/4 cup lemon juice

  • Kosher salt and black pepper

  • Fresh parsley, chopped, for serving

  • Optional: fresh lemons for serving


 
  1. Cook pasta as package describes. Before you drain, be sure to pull some of the water it cooks in and set aside. You’ll need around 1/2 cup! This starchy water helps create a perfect sauce.

  2. While pasta cooks, make the sauce in a large mixing bowl: whisk together the ricotta, parmesan, lemon juice, and a few pinches of salt and a little black pepper. Set aside until pasta is done and you have the pasta water ready!

  3. Once the pasta is done boiling and the pasta water set aside, drain the angel hair. Add the pasta water to the ricotta mixture slowly until it is more saucy. You shouldn’t need any more than 1/2 cup of it, maybe a little less, to get a nice consistency that’s still thick enough to stick to the pasta once it’s added.

  4. Next, add the angel hair and combine using tongs or a rubber spatula until pasta is ooey, gooey, lemony, and delicious!

    Plating: Top pasta with fresh lemons for those who’d like more tang, and sprinkle with fresh parsley (or other herbs of choice!)
