Total Time (no cooking): 10 minutes (let sit in fridge for as long as possible)

ingredients - Serves many! make for a party or keep in fridge for up to a week

  • 1 1/2 cup plain Greek yogurt
  • 1 small to medium cucumber 
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped fresh dill
  • 2 tsp minced garlic
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Kosher salt 

1. Wash your cucumber and cut off each end. Using a cheese grater, grate the entire cucumber into a colander. Let sit in the sink or under a plate that will catch water as it drains out of the cucumber while you prep the other herbs. 

2. Chop mint and dill until you get about 1 tbsp of each and add to a medium sized mixing bowl. Add the minced garlic, garlic powder, olive oil, and 3 pinches of Kosher salt to the bowl as well. Mix.

4. Add the Greek yogurt. You can use any kind as long as it's plain. Non-fat will be lighter, but regular fat will have a more robust taste. 

5. Take a paper towel and press into the colander to rid the cucumbers of more additional water. Empty the shredded cucumber into the bowl. Mix well. 

6. Cover the bowl and let the mixture cool for as long as possible before serving. The flavors will blend best once chilled for around two hours. Serve with any cracker, chip, or as part of a dish that needs a cool, flavorful addition. Tzaziki is tasty and low calorie!
