Grilled Corn, Basil, and Blueberry Salad
This salad is simple, different, and easily made in 15 minutes for a perfectly beautiful summer dish. My husband, not a salad guy, absolutely loves it. Each bite contains a great combination of flavors with the blueberries, basil, charred corn, feta, and tanginess of the simple marinade. This is the perfect summer side dish, or can be made a main course for 2 with some grilled chicken or steak added in. It’s tasty the next day, too, so it can easily be made ahead of time or saved for a tasty leftover lunch.

Ingredients - serves 4
1 cup of fresh blueberries
Four ears of corn
2 small handfuls of salad greens of choice
1/4 cup fresh basil, roughly chopped
3 oz. feta cheese
2 tsp. olive oil
2 tbsp. white wine vinaigrette
Black pepper
Kosher salt
Grill the ears of corn to give them some nice char. If you don’t want to grill (or don’t own one), you can boil them or use frozen corn, but fresh is so much better.
In a large mixing bowl, combine the blueberries, handfuls of fresh salad greens, chopped basil, and feta. Mix all together. Use a knife to cut the kernels off of the corn cob, and stir the kernels into the bowl as well.
Add in the olive oil, white wine vinaigrette, some black pepper to taste, and about 3 good pinches of Kosher salt. Stir and taste to add more salt or pepper if desired!
Plating: Garnish with full leaves of fresh basil and serve as a side dish!
