Lemon Pepper Arugula Salad


A simple 5 minute salad, coming right up! With summer around the corner, I know you don’t want to waste the beautiful weather over your hot stove top, so try this simple salad that is great as a side OR beef it up as a main by grilling some chicken to shrimp to add to it. The peppery flavor of arugula pairs so nicely with the tartness from the lemon juice, and this recipe tastes it up a notch by encouraging you to use enough black pepper to give it a little ZIP that’ll literally spice up this salad. Some grated AND shaved parmesan make it complete! This recipe is one I’ve thrown together for so many family dinners. Friends and family have messaged me often for the ingredient breakdown that I figured it was time to just have a link to send along and share with everyone. Enjoy!

Ingredients - serves 4

  • 4-5 oz of arugula

  • 1 tbsp. of olive oil

  • 2 tbsp. lemon juice

  • 2 tbsp. grated parmesan cheese

  • 2 pinches of Kosher or sea salt

  • A hefty amount of freshly ground black pepper

  • Optional: a small handful of shaved parmesan


 
  1. Empty the arugula into a large salad bowl that you plan to use for serving.

  2. Drizzle the olive oil and lemon juice over the arugula. Using your hands (this is best), mix together to coat all of the arugula.

  3. Sprinkle on the grated parmesan cheese, a few pinches of salt, and crank a good amount of fresh pepper over the arugula. I like to add so much pepper that it’ll almost have a little kick. It pairs so nicely with the bitterness of the arugula and acidity from the lemon juice. Mix fully to coat.

  4. Taste test! Snack on a little arugula leaf and adjust to your liking. Some like more salt, more pepper, or even lemon juice if you like it tangy. This recipe is a great base to launch you to your perfect summer salad!

    Plating: Top with fresh shaved parmesan - it’s optional but yummy!
