Peanut Lime Ramen Noodles
This is my absolute favorite quick lunchtime meal. I always crave these flavors but can’t always get takeout, but honestly it is more convenient to make these peanut lime noodles in under 10 minutes! They’re peanut buttery creamy and lightly sour from the lime, and topping it with fresh peanuts for a bit of crunch make this the perfect dish for one. It’s cheap, filling, full of protein, and literally takes only a few minutes to make. Does it get better? Enjoy!

Ingredients - serves 1
1 pack of ramen noodles, any kind but I like beef or soy sauce for this one
1.5 tbsp. peanut butter
1.5 tbsp. soy sauce
1 tbsp. lime juice
1-2 tbsp. peanuts
Optional: sriracha and crushed red pepper flakes
Bring a small pot of water to a boil.
While the water is coming to a boil, make your sauce: whisk together the peanut butter, soy sauce, lime juice, half of the ramen flavoring packet, and a little squeeze of sriracha if you’d like. It takes a while to whisk as the peanut butter will separate at first, but keep whisking until it smoothes out.
Add just the dried ramen noodles to the boiling water and cook all the way through for about 3 minutes. Drain when done.
Mix the sauce and noodles together. Top with fresh peanuts for crunch and some crushed red pepper flakes for heat if desired. Enjoy!
