scratch made chicken teriyaki and broccoli


This meal was made for easy weeknight dinners, and also makes the perfect leftovers for later! Want to dabble in tasty Asian dishes? This dish is a great launch pad, and it’s friendly for all palates. Want it to be more spicy? Top with some crushed red pepper when serving! Enjoy!

Ingredients - serves 4

  • About 1.5 lbs boneless skinless chicken breast, diced into inch cubes

  • Two small heads of broccoli

  • Olive oil

  • 1/3 cup Sherry (real Sherry, if possible)

  • 1/2 cup soy sauce

  • 1/4 cup rice vinegar

  • 4 garlic cloves, minced

  • 1 tsp. minced ginger

  • 1/3 cup water

  • 1 tbsp. brown sugar

  • 1 tbsp. corn starch

  • Kosher salt

  • Black Pepper

  • Optional for garnish: sesame seeds, green onion

  • Optional for plating: rice, rice noodles, zoodles, spaghetti squash, etc.


 
  1. Pre-heat oven to 425.

  2. Cut broccoli into florets and place in bowl. Drizzle with 1 1/2 tbsp. of olive oil, and season with 3 pinches of Kosher salt and some black pepper. Transfer to a baking sheet and roast for 15 minutes, or until edges of florets begin to blacken.

  3. In another bowl, place chicken that’s been diced into cubes, and season with 4 pinches of Kosher salt and some black pepper. Heat up a large skillet on medium high heat and add the 1 1/2 tbsp. of olive oil into the skillet. Let heat up for 30 seconds, then add the chicken. Let the chicken brown on all sides - it should take about 6 minutes. Remove chicken and place to the side, even if slightly underdone - it will cook in the sauce soon.

  4. Make the sauce: whisk together soy sauce, rice vinegar, minced garlic, ginger, water, brown sugar, and corn starch.

  5. Keep pan on medium high and add the sherry to deglaze the pan (scrape the bottom of the pan clean). Add the sauce mixture and bring to a boil. Once bubbling and thickening up, add the chicken back in the skillet, stir, and turn pan to medium or medium low (lightly simmering). Stir chicken and let the sauce continue to thicken around it for about 5-7 minutes, or until all of the chicken is fully cooked.

  6. Turn off heat, add sesame seeds and chopped green onion on the top.

    Plating: Serve over rice or rice noodles, adding extra tasty sauce from the skillet with a spoon!
