slivered almond basil pesto


Does anyone love pesto as much as I do? I always crave it - no matter the season. When basil is in season, I make tons to freeze and save for winter days that need a pop of fresh basil flavor. This recipe is so simple and tasty, and it doesn’t require expensive pine nuts. Who has money for that? Not I! Give this a shot and use this pesto next time you make pasta!

Prep Time: 5 minutes

Cook Time: 5 minutes

Level: Easy

Ingredients - makes 1/2 cup of pesto

  • 1 1/2 cups fresh basil (loose packed - 4 to 6 oz)

  • 1/4 cup slivered almonds

  • 2 tbsp minced fresh garlic

  • 1/4 cup grated or shredded parmesan

  • 1/4 cup olive oil

  • 1 tbsp. fresh lemon juice

  • 1/4 tsp onion powder

  • Kosher salt

  • Black pepper


 

1. Place all ingredients in a blender, mixer, or my favorite, a Ninja Express. For Kosher salt, begin with 2 pinches. Blend until all ingredients end up on the side of the mixer.

2. Scrape sides of the mixer so the blender can reach them again. Blend again. Repeat three to four times.

4. Taste test. Add one more pinch of salt if needed. Blend once more after sides have been scraped. 

3. Top pesto on chicken, pasta, vegetables and more!

Keep in your refrigerator for a week. Whatever you don’t use - freeze!
