Slow Cooker Peanut and Lime Chicken with Broccoli and Leeks
Easy summer dinner, coming right up! What if I told you that you could spend your evening outside enjoying the day but STILL have a special dinner from scratch? This peanut and lime chicken with broccoli and leeks is light, fresh, and full of flavors that come together deliciously with only a little effort on your part. The crunchy peanuts on top are a must to add texture, and you can serve with rice, rice noodles, or eat like a soup! Don’t need 6 servings? The leftovers are almost better than the day you make it!

Ingredients - serves 6
3 medium to large boneless skinless chicken breasts
2 small or 1 large head of broccoli
1 large leek
3 cloves of minced garlic
1 can of coconut milk
1/2 cup of peanut butter
1/3 cup of lime juice
2 cups of stock (veggie or chicken best)
2 tbsp. soy sauce
1 tsp of ground ginger
1/2 - 1/4 tsp. crushed red pepper
Fresh peanuts
Kosher salt
Rice or rice noodles cooked as described for serving
Optional: fresh cilantro for plating
Prep your ingredients: dice the chicken into 1 inch cubes, cut the broccoli into florets, slice the hard, white part of the leek into rounds (we won’t use the green parts - save them for a veggie stock!), and mince your garlic. Add to the crockpot.
Turn the crockpot on to the setting you plan to use, and add the rest: the coconut milk, peanut butter, lime juice, stock, soy sauce, ground ginger, crushed red pepper, and 3-4 good pinches of Kosher salt. Stir all together.
Cover, and let cook. If you are able, open and stir a couple of times during the cooking process. Serve over rice or rice noodles and top with cilantro and a handful of fresh peanuts (I like salted! But if you prefer less salt, unsalted is fine).
