Smoky Honey Roasted Delicata Squash with Goat Cheese


Love cooking with squash in the fall, but hate all of the prep work? This recipe is for you! Delicata Squash has a very thin skin that needs no peeling, so when it’s roasted, it’s soft and takes on the flavor you’ve added to this tasty winter squash variety that tastes a lot like the popular butternut squash. Roasted with honey, garlic, and some delicious smoked paprika - this dish is simple, flavorful, and offers a little taste of the season in each and every bite. It pairs nicely with any main protein dish or fall soup! A perfect Thanksgiving side!

Prep Time: 5 minutes

Cook Time: 35 minutes

Level: Easy

Ingredients - serves 4 as a side

  • 2-2.5 lbs delicata squash

  • 2 cloves of garlic, minced

  • 1 tsp. smoked paprika

  • 1/2 tsp. salt

  • 1 tbsp. honey

  • 1 tbsp. olive oil

  • 2 ounces of goat cheese

  • A little black pepper

  • Optional: chopped parsley for serving


 
  1. Pre-heat oven to 425.

  2. Wash the outside of each squash. You might have one large or a couple smaller squashes, but either way, you need to use a large knife to cut it the long way, right down the middle of the stem. Use a spoon to scrape out the seedy center, leaving the light orange flesh ready to be cut and cooked.

  3. Cut the squash into half-rounds that are no thicker than a 1/2”. Add to a large mixing bowl.

  4. Add the minced garlic, paprika, salt, and some black pepper to the mixing bowl. Next, add the honey and olive oil and mix together until it’s all coated and glistening.

  5. Spread the squash out in a single layer on a greased baking sheet. Use two baking sheets if need be. Place in the oven and let bake for about 30-35 minutes, until squash is soft and lightly browned. About half way through, flip the squash.

  6. Let cool for about 5 minutes before plating and topping the squash with about 2 ounces of goat cheese crumbles and some fresh chopped parsley if desired.
