Thai Curry Dry Rub Grilled Wings


Summer grilling weather on your mind? Grilled chicken wings are crispy, juicy, and full of flavor! If you can stick to the whole wings for the grill, do so - they stay juicer and they’re easier to handle on the grill. This curry dry rub uses common thai flavors to give each bite a bang. You won’t even ranch or blue cheese…

My wing recipes are always written for two people. This encourages you to try to make more than one flavor if you’re cooking for a family! OR just double (or triple, etc) this recipe to suit your needs.

Prep Time: Minimum 1 hour

Cook Time: 20-30 minutes

Level: Easy

Ingredients - Serves 2

  • 2 pounds full chicken wings (about 7 whole wings)

  • 2 tsp. fish sauce

  • 1 tbsp. soy sauce

  • 1 tbsp. lime juice

  • 1 tsp. Kosher salt

  • 1 tsp. curry powder

  • 1/2 tsp. ground turmeric

  • 1/2 tsp. garlic powder

  • 1/2 tsp. ground ginger

  • 1/4 tsp. cayenne pepper


 
  1. In a small bowl, mix together the fish sauce, soy sauce, lime juice, and a couple pinches of salt.

  2. Add the chicken wings to a gallon ziplock bag or large bowl. Toss the sauce mixture in with the wings and combine until the wings are coated. Place in the refrigerator to marinate for 1-4 hours. Toss them around a few times as they marinate.

  3. Get ready to grill! Heat up your grill.

  4. In small bowl, mix dry ingredients together: Kosher salt, curry powder, turmeric, garlic powder, ground ginger and cayenne (add more cayenne if you like spicy! This amount makes it barely medium).

  5. Take wings from marinade and pat them dry. Sprinkle dry rub all over the wings and mix around to coat all surfaces of the wings.

  6. Grill on direct heat on the grill, about 10-15 minutes per side depending on the heat of your grill! Maybe switch from side to side a couple of times to get a nice char without burning. Enjoy!
