Easy Yellow curry paste From scratch
Sure, you can buy curry paste in a jar. But wouldn’t it be fun to have your own? You’ll make more, it’ll taste better, and you can learn to make adjustments so it fits your desired flavor. Trust me, this curry paste is easy to make, and it’ll up your curry cooking game.

Ingredients
1 yellow bell pepper, diced
5 stalks of green onion, whole, chopped
4 cloves of garlic, peeled
6 dried chilis
1 full stalk of lemongrass, roots cut off, chopped
2 tbsp. grape seed oil
1/2 lemon juiced
1/2 lime juiced
2 tsp. minced ginger
1 tsp. Kosher salt
1 tsp. ground turmeric
1 tsp. ground cumin
1/2 tsp. ground coriander
1/2 tsp. sugar
1/8 tsp. black pepper
Prep all ingredients, and combine all into a food processor. Taste test for desired flavor profile. This should create a medium spice level.
Note: if you’d like it to be high heat, add 3 more dried chili peppers. If you’d like mild, only add 2 dried chili peppers.
